These donuts are so soft and airy, they'll collapse if you don't handle them gently! They melt in your mouth and are easy to make—just mix all the ingredients together and knead. I created this recipe so my donut-loving daughters could enjoy fresh, homemade donuts that are simple and delicious right out of the fryer.

Combine all the ingredients, including the shortening or butter, and knead until the dough is smooth. Shape into a ball and place in a greased bowl.

Cover with plastic wrap to prevent drying out, and let rise in a warm place for about 1 hour, or until doubled in size.

Punch down the dough, then divide into 9 pieces of about 1 3/4 ounces (50g) each using a dough scraper or knife. Shape each piece into a ball, cover with a damp cloth, and let rest for 10 minutes.

Gently flatten each ball, poke a hole in the center with your finger, and stretch evenly to about 1 1/4 inches (3cm) wide.

Place the shaped donuts on a rack and let them rise until the tops and bottoms are slightly dry.

Let rise until they are noticeably larger (about 1 hour at room temperature, but judge by size).

Heat oil to 350°F (180°C) and fry each side for 1 minute until golden brown.

Dip one or both sides in a glaze made from 1/2 cup powdered sugar (60g) mixed with just under 1 tablespoon water, or finish by coating with granulated sugar.
