Homemade Tiger Nut Horchata

Soak the tiger nuts in the refrigerator for 24 hours.

Drain the tiger nuts.

Add about 4 cups (1 liter) of water.

Let it sit in the refrigerator for 4-6 hours.

Strain the mixture first with a regular strainer, then with a fine cloth or nut milk bag to remove smaller solids.

Add the powdered sugar to the liquid and blend or whisk until the sugar is dissolved. You can use store-bought powdered sugar or make your own by grinding granulated sugar in a blender or spice grinder.

Serve very cold. Enjoy on its own or with traditional Valencian fartons.
