Delicious and flourless.

One of my daughters-in-law doesn't eat anything with flour. She's always searching for alternatives and asked me to make bread without flour. Here in Mexico, it's very difficult to find flour that's not wheat-based. I happened to see this recipe on a Mexican TV show, made them immediately, and they were a hit.

Ingredients

15 pieces
  1. 2 cupsground rolled oats
  2. 1 cuprolled oats
  3. 3eggs, separated
  4. 1 cupsugar
  5. 3 tablespoonsbutter
  6. 1 tablespoonbaking powder
  7. 2 tablespoonscocoa powder

    Cream the butter with the sugar.

  2. 2

    Add the egg yolks one by one and continue beating.

  3. 3

    Add the oats previously ground in a blender or food processor, along with the rolled oats and cocoa powder.

  4. 4

    Mix the blended ingredients with the previous mixture (butter with sugar and yolks).

  5. 5

    Beat the egg whites until stiff peaks form and gently fold them into the dough.

  6. 6

    Bake for 10 minutes or a little longer at 350°F (180°C) in a preheated oven.

  7. 7

    On a greased baking sheet, drop spoonfuls of cookie dough (not too big, but not too small), in equal portions and spaced apart (as they spread).
