This is a vegetarian version of kibbeh and is considered one of the appetizer dishes in Lebanese cuisine.

Boil 4 potatoes, then mash them with a fork (not a blender) to keep the texture smooth but not sticky.

Rinse 1 cup of fine bulgur and let it soak for about 1 hour until soft. Then grind it using a meat grinder and add it to the mashed potatoes. Finely chop the onion, 1/2 cup walnuts, and 1 hot pepper, along with some fresh mint and a few basil leaves, and add them to the potatoes. Season with black pepper, cumin, and salt. Mix everything well until fully combined.

Drizzle olive oil on top. For a red color on top, you can add a little chili paste if you like.
