Ingredients

Serves 3 servings
  1. 2large eggs
  2. 1/2 teaspoonsoy sauce
  3. 1 teaspooneach mirin and dashi granules
  4. 1 teaspoonaonori (dried green seaweed flakes)
  5. 2 tablespoonswater (about 30 ml)
  6. 1 teaspoonolive oil

Steps

  1. 1

    Beat the eggs, then mix in all the ingredients marked with ☆ (soy sauce, mirin, dashi granules, aonori, and water) until well combined.

  2. 2

    Heat olive oil in a tamagoyaki (Japanese omelet) pan. Once hot, reduce to low heat and pour in the egg mixture in several batches, rolling each layer as you go.

  3. 3

    When all the egg is cooked, transfer to a plate, let cool slightly, then cut into 6 pieces.

    Lunchbox tip:

    This fluffy, aonori-flavored omelet tastes great even when cold, making it perfect for lunchboxes.
