Ingredients

Makes 5 rice balls
  1. 3 1/3 cupscooked rice (about 500g)
  2. 4 tablespoonsmiso paste
  3. 1-1 1/3 tablespoonssugar
  4. 1 tablespoonmirin
  5. 1 tablespoonsoy sauce seasoning (mentsuyu)

Cooking Instructions

  1. 1

In a bowl slightly larger than a rice ball, mix together all the ingredients marked with ★ (miso, sugar, mirin, mentsuyu). Adjust the amount of sugar to taste if you like it sweeter.

  2. 2

Using plastic wrap, shape the warm rice into rice balls. Each rice ball should be about 100g (about 1/3 cup).

  3. 3

Dip each rice ball into the miso mixture to coat one side.

  4. 4

Flip and coat the other side as well.

  5. 5

Arrange the rice balls on a baking sheet and bake in a toaster oven. Adjust the baking time to your preference. You can bake one or both sides, depending on how crispy you like them.

  6. 6

Once baked and slightly cooled, they're ready to eat!
