  • For the cake layer -----
  • 1 boxchocolate cake mix (such as Betty Crocker)
  • as neededVegetable oil,
  • 3eggs
  • as neededWater,
  • For the flan -----
  • 1 canevaporated milk
  • 1 cansweetened condensed milk
  • 4eggs
  • 1 package (6.7 oz)or 190 grams) cream cheese
  • as neededVanilla extract,
  • Topping -----
  • You can use any of the following:
  • as neededMelted cajeta (Mexican caramel sauce),
  • as neededRompope (Mexican eggnog),
  • as neededChopped or halved pecans,

Steps

  1. 1

    First, use a mixer to prepare the cake batter according to the instructions on the box. Set aside once everything is combined.

  2. 2

    In a blender, mix all the flan ingredients: evaporated milk, sweetened condensed milk, eggs, cream cheese, and vanilla to taste.

  3. 3

    Grease and flour a cake pan. Pour in the chocolate cake batter first, then pour the flan mixture into the center. (The order doesn't really matter.)

    After this step, do not mix or stir. Place the filled cake pan inside a larger pan filled with water to bake in a water bath (bain-marie).

  5. 5

    Bake in a preheated oven at 350°F (180°C) until a knife or toothpick inserted comes out clean.

  6. 6

    Remove from the oven, let cool, and unmold. You can drizzle with melted cajeta and sprinkle with pecans.

    If you use vanilla cake, you can drizzle with rompope and decorate with pecans.

    If your cake pan is flame-safe, you can melt 1 or 2 cups of sugar until clear (to make caramel), then pour in the batters and bake in a water bath as described above.

  9. 9

    Refrigerate—it's even better if you chill it overnight!
