I wanted to enjoy taiyaki at home that's not too sweet. Even with 2 to 2 1/2 tablespoons (30–35 grams) brown sugar, it's sweet enough. If you're filling with chocolate or custard, you can use even less sugar!

Place all the ingredients in a bowl in the order listed. First, whisk together the cake flour and baking powder. Preheat the Vitantonio taiyaki maker!

Add the sugar and mix. Add the egg and soy milk or milk, and gently mix with a spatula. Pour into the Vitantonio and cook for 4 minutes. Cool on a wire rack.

For a savory version, use cheese as the filling. Chocolate or nuts also taste great.

Once cooked, cool on a wire rack. If you cook for at least 4 minutes without opening the lid, the edges will be crispy and can be trimmed. Melted cheese that oozes out is delicious.

You don't have to use red bean paste. Try using leftover curry with little liquid, cheese, chocolate, custard, or peanut butter for the filling.

With 2 tablespoons (30 grams) sugar and cheese filling, or with chocolate and nuts, the taiyaki was sweet enough and delicious, so I updated the sugar amount (Dec 4).

For the chocolate and nut version, the chocolate melts a bit into the batter, giving it a light chocolate color.
