Ingredients

90 minutes
  1. Dumpling wrappers
  2. 1 cupall-purpose flour (about 150g)
  3. 1 cupbread flour (about 150g)
  4. 2/3 cupwater (about 140ml)
  5. 1/2 teaspoonsalt (about 2g)
  6. Filling
  7. 7 ozground pork (finely chopped) (about 200g)
  8. 7 ozraw shrimp, peeled and deveined (about 200g)
  9. 1 tablespoonsoy sauce (about 15g)
  10. 1 tablespoonrice wine (about 20g)
  11. 1/4 teaspoonsalt (about 1g)
  12. 1 cupyellow chives, chopped (about 5-6 stalks, 150g)
  13. 1green onion
  14. 2 tablespoonswater (about 30g)
  15. 1 tablespoontoasted sesame oil (about 15g)
  16. 1/2 teaspoonwhite pepper (about 2g)

    Place the filling in the center of each wrapper. Fold into a pillow shape by folding in half, then rolling up the sides.

    Heat 2 tablespoons of oil in a skillet. Add the uncooked potstickers and pan-fry until the bottoms are golden brown. Add 1–2 cups of water (using a standard measuring cup), cover, and cook until the potstickers are cooked through.

    Finely chop the ground pork. Place in a bowl and add rice wine, soy sauce, salt, green onion, sesame oil, and white pepper. Mix well, then add the yellow chives and green onion and stir to combine.

    Divide the dough into 30 pieces (about 1/2 oz or 15g each). Flatten each piece and roll out so the center is slightly thicker.

    Wash all ingredients. Finely chop the shrimp, yellow chives, and green onion.

    Combine the all-purpose flour, bread flour, water, and salt by hand until a smooth dough forms. Let rest for 1 hour.
