Cut the chicken into bite-sized pieces. Chop the cabbage. Thinly slice the onion. Heat oil in a frying pan.

Add the chicken, salt, pepper, and sugar. Cover and cook for about 3 minutes. Flip the chicken pieces.

Add the udon noodles, cabbage, and onion. Pour in the white dashi and mirin. Cover and cook for about 4 minutes.

Pour the beaten eggs evenly over the pan. When the eggs are just set, transfer everything to a serving dish. Top with bonito flakes and aonori. Serve.
