Quickly rinse the adzuki beans, then place them in a pot with plenty of water. Bring to a boil and cook for 2–3 minutes. Drain in a colander and discard the water. Do not use pressure at this stage.

Put the adzuki beans and the measured water into the pressure cooker. Place a drop lid (or parchment paper) on top. Close the lid and heat until steam starts to come out of the weight. Then reduce to low heat and cook under high pressure for 25 minutes.

Turn off the heat and let the pressure release naturally. Open the lid, and if the beans are still hard, simmer a bit longer. Once the beans are soft, add the sugar and simmer for a short time.

If the mixture thickens and the liquid reduces too much, add a little more water. When the beans look glossy, add a pinch of salt to enhance the flavor. To serve, ladle the sweet beans into bowls and top with toasted mochi.

At home, we save some zenzai, add a little extra sugar, and cook it down while stirring to make sweet bean paste (tsubuan).

Cook until it reaches your desired thickness. It will firm up as it cools. Freeze for later use in kusa mochi (mugwort rice cakes) or other treats. It's also delicious as a filling for bread.
