Ingredients

Serves 3 servings
  • 5 ozgreen onion (about 150 grams)
  • 1egg
  • 1 1/4 cupsall-purpose flour (about 150 grams)
  • 3 1/2 ozsmall shrimp (about 100 grams)
  • 1/3 cupfresh parsley, chopped (about 10 grams)
  • 1 cupvery cold chicken broth (about 240 ml)
  • Oil for frying
  • Salt
  • Food coloring (optional)

Steps

    Finely chop the green onion.

  2. 2

    Crack the egg into a bowl and beat well.

  3. 3

    Add a little broth to the egg, then gradually add the flour. Keep stirring and adding broth and flour until you have a batter similar in thickness to Greek yogurt.

    Add the chopped green onion, parsley, shrimp, and food coloring to the mixture. Season with salt and pepper, then mix well.

    Let the batter rest for at least two hours.

  6. 6

    Using a tablespoon, drop spoonfuls of the batter into very hot oil and fry until golden to make the fritters.
