Healthy Chilled Ramen with Soy Milk and Yuba

A simple and healthy chilled ramen made with soy milk and yuba. It’s light yet rich and creamy, perfect for a hot day’s lunch!
Recipe background:
I received ramen as part of a cooking monitor program, so I decided to try making this. The miso-flavored soup pairs really well with soy milk. Topping with fresh yuba makes the ramen look and taste elegant!

Steps
- 1
Bring a pot of water to a boil. Add the noodles and cook for 4 minutes, gently loosening them as they cook. Drain in a colander, rinse under cold running water, and drain well.
- 2
In a bowl, combine the included soup base with a little water and mix well. Once dissolved, add the soy milk and mix again.
- 3
Add the noodles to the bowl. Arrange the yuba, cut into bite-sized pieces, on top. Add the toppings, and sprinkle the included spice packet if desired. Serve immediately.
