This was a very fun project for me, I am yet to make boba/tapioca pearls from scracth and it might as well be my next project.

COOKING THE PEARLS: In a large pot, bring water to a roaring boil. Add tapioca pearls and immediately lower heat to medium

Cook pearls for 10 minutes, stirring occassionally. Cover with a lid, turn off the heat and leave for 3 minutes

Drain pearls with a colander and rinse under cold running water to stop the cooking and remove the starchy outer layer. Set aside in clean cold water as you prepare the sweetener

SWEETENING THE PEARLS: Add the sugar and water to a pot. Cook stirring over medium heat to dissolve the sugar, and then bring it to a boil

Cook down the mixture to the desired consistency. Using a slotted spoon, remove pearls from the cold water and transfer them into the syrup

Bring the syrup back to a boil and cook a little longer to thicken it (2 - 3 minutes). Take off heat and transfer into a glass jar

Use warm as they harden as they cool down. If storing away, just reheat in the oven for a few minutes to soften and make scoopable
