Caramelized Chicory and Gamba’s aglio olio

Slice the pepper in rings finely slice the garlic, and pick the herb leaves, put in a bowl. Add the oil and gamba’s and stir.

Squeeze over the lemon and put the bowl in the fridge for An hour to marinate.

Preheat the oven on 200 degrees and add the gambas and oil to a tray. Heat them for 15 minutes.

Clean the chicory cut in half and removie then hard cores.

Heat the butter in a frying pan, when it turns golden brown add the chicory with the cut side down. Fry for 2 minutes till brown

Turn the Chickory, squeeze the honey between the leaves, sprinkle over the thyme and bake for 2 more minutes.

Stop the caramelization process by drooping balsamico oil on them, add pepper and salt to your liking
