Steps

Preheat oven to 350. Grease 2 loaf pans with butter

Grate 2 cups zucchini (with or without the peel) and set aside

In a separate bowl mix flour, salt, baking soda, nutmeg and cinnamon. Set aside

In stand mixer put in the stick of butter and turn on. Add brown sugar and mix until blended. Then add white sugar. Mix until creamed

Add eggs 1 at a time until mixed fully. Then add milk and lemon juice and mix.

Add dry ingredients and mix together.

Fold in zucchini to incorporate into the mixture

Put even amount into 2 loaf pans and bake.

Check at 50 minutes. If not done add another 10 minutes. It’s done when a toothpick comes out dry.

Remove from loaf pan and place on cooling rack
