This is a delicious tart made with ripe, locally grown strawberries that are exquisitely sweet. I made a delicious cream with cream cheese, sugar, and heavy cream—truly a treat.

CRUST INSTRUCTIONS
In a mixing bowl, combine the flour, salt, and powdered sugar.
Add the butter and use your fingers to work it in until the mixture forms small pea-sized crumbs.
Add the egg and mix with a silicone spatula. Place the dough on the counter and gently bring it together with your hands, but do not knead. Shape into a ball, flatten into a disk, wrap in plastic wrap, and refrigerate for 25 to 30 minutes. - 2
Lightly flour your work surface. Place the dough disk on the floured surface and sprinkle a little flour on top. Roll out the dough with a rolling pin until it’s slightly larger than your tart pan, enough to cover the edges.

Brush the inside of the tart pan with melted butter.
Preheat the oven to 350°F (176°C).
Roll the dough onto the rolling pin and transfer it to the pan, pressing it into the sides. Trim any excess dough.
Bake for 20 to 25 minutes, until the crust is fully golden and cooked through. - 4
STRAWBERRY SAUCE
In a small saucepan, combine the strawberries, sugar, and water. Cover and cook over low heat until the strawberries are soft.
Add the dissolved cornstarch and mix well. Cook for about 40 seconds, stirring so it doesn’t stick to the bottom. Let cool. - 5
CREAM CHEESE FILLING
In a bowl, beat the cream cheese with the sugar and heavy cream until smooth. - 6
SUGAR SYRUP
In a small saucepan, dissolve the sugar in the water. Cook until it thickens slightly. - 7
ASSEMBLY OPTION 1
Fill the tart with the strawberry sauce.
Spread the cream cheese mixture on top.
Arrange the strawberries in a circular pattern over the cream.
Warm 1/4 cup honey slightly and brush it over the strawberries.
If not serving immediately, refrigerate the tart since it contains cream cheese and heavy cream. - 8
ASSEMBLY OPTION 2
Spread the cream cheese mixture over the tart crust.
Spoon the strawberry sauce over the cream.
Arrange the strawberries in a circular pattern on top.
Brush the sugar syrup over the strawberries. - 9
