Easy, quick recipe to make fresh rhubarb juice with rhubarb, sugar, and black tea. This recipe is from our Amish farmers in Iowa. Rhubarb juice also makes an excellent sweet, medium, or dry wine, see my recipe.
We grown wild rhubarb here in the hot valley, and green and red rhubarb in the cooler hills nearby, sold at the farmers market.

Ingredients

2 people
  • 5 poundsunpeeled, washed, chopped green rhubarb stalks
  • 3 poundssugar
  • 3 quartsblack tea made from one teabag or 1 Tbs loose black tea
  • Equipment: Plastic food container, 6 bottles, 6 corks, funnel with paper towel
  • Cost: rhubarb farm free or $20, sugar $4, cork, 25 cents, $4.25 to 91 cents per bottle

    Chop rhubarb stalks, cover with sugar, sugar will extract the rhubarb juice in four days. Boil and cool black tea, add to mix, stir well to dissolve any sugar on the bottom.

    Siphon rhubarb juice from top, fill five bottles. Siphon bottom juice through paper towel in funnel into 6th bottle. Press rhubarb to extract last juice, filter, bottle. Add pressed rhubarb to compost.

    Cork bottles. Refrigerate. Good for weeks. Enjoy.

My grandparents and parents taught me growing, cooking and preserving home grown fruits and vegetables, eggs, meats and fish. I got certified by the University of California Master Gardener Program in 2005. I try to bring out the original flavor of ingredients, then add layers of spices, herbs and flavorings that enhance, not distort the taste.
