I made these muffins for breakfast this morning. They turned out delicious and very fluffy. We enjoyed them with a good cup of coffee. This is an easy and simple recipe to make.

I made these muffins for breakfast this morning. They turned out delicious and very fluffy. We enjoyed them with a good cup of coffee. This is an easy and simple recipe to make.

In a bowl, sift together the flour, baking soda, baking powder, and salt.

In another bowl, mix the melted butter with the granulated sugar and brown sugar, and beat. Add the eggs and yogurt, and beat again. Add the mandarin orange zest, milk, and vanilla, and mix.

Add the egg mixture to the flour mixture and mix well. Gently fold in the blueberries and mix until just combined.

Preheat the oven to 350°F (178°C). Use a 12-cup muffin pan, each cup about 2 3/4 inches in diameter and 1 1/2 inches deep. Spray the muffin pan with nonstick cooking spray or brush with melted butter.

Divide the batter evenly among the muffin cups. Bake the muffins for about 27 minutes, until golden brown and a toothpick inserted in the center comes out clean.
