  • 4medium potatoes
  • 5large eggs
  • 1onion
  • Olive oil
  • Pinchsalt
  • Pinchblack pepper

    Slice the onion and cook it over medium heat for 30 minutes without sugar. Use medium-low heat and let it soften with a pinch of salt.

    Fry the potatoes in olive oil.

    When the onion is caramelized and the potatoes are golden, mix them with the 5 eggs.

    Let the potatoes and onion rest with the eggs for at least 5 minutes.

    Cook the mixture on high heat, flipping once, until set. Enjoy!
