Cut the tomatoes into bite-sized pieces.

Cut the aubergines in half lengthwise and fry in a frying pan. Once cooked, cut into thirds.

Make the sauce: Mix grated ginger, soy sauce and olive oil together.

Place the tomatoes, aubergines and sliced red onion on a plate and top with the ginger sauce.
