Melt the butter and brush it over the phyllo sheets. Layer the phyllo sheets in a tart pan, overlapping them.

Peel and thinly slice the shallot, then spread it over the phyllo.

Dice the yellow bell pepper and add it on top of the phyllo. Rinse and dry the cherry tomatoes, then add them with the bell pepper.

Slice the cheese and arrange the slices over the tomatoes.

Bake at 350°F (180°C) for 25 minutes.
