  1. 2red bell peppers,
  2. 2yellow bell peppers,
  3. 1 stalkcelery,
  4. 14 ozcanned chickpeas, drained,
  5. 9 ozchorizo (mild or spicy),
  6. A fewsprigs of cilantro,
  7. 1drizzle of olive oil,
  8. 2 teaspoonssmoked paprika,
  9. Salt, pepper

    Seed and slice the bell peppers into strips. Thinly slice the celery and cut the chorizo into rounds. Chop the cilantro. Rinse and drain the chickpeas.

    Heat the olive oil in a large skillet, add the bell peppers, chorizo, celery, paprika, and salt. Sauté over high heat for 5 minutes, then cover and simmer over low to medium heat. Stir regularly until the peppers are tender (15-20 minutes).

    Add the chickpeas, stir, and continue cooking for 5 minutes. Sprinkle with chopped cilantro before serving. Season with freshly ground pepper. Enjoy 😋.
