Ingredients

1/2 hour prep, 1/2 hour bake, 1/2 hour cool
2 people, 4 pretzels
  1. Halfpound bagel flour or similar superfine all purpose wheat flour, 250 grams
  2. 1 Tspbaking powder
  3. 1 Tspseasalt
  4. 1 Tspyeast
  5. 1 Tspsugar
  6. 1 cupyoghurt
  7. 2 Tbsunsalted softened butter
  8. 3 pintswater for boiling
  9. 3 tablespoonsbaking soda
  10. Flaked seasalt for garnish
  11. Equipment: flour mill attachment to mixer, doughmixer
  12. Cost: flour 12 cents, butter 10 cents, yoghurt, other 25 cents. 47 cents for 4 pretzels

Cooking Instructions

1/2 hour prep, 1/2 hour bake, 1/2 hour cool

    Make dough in mixer with flour, yeast, baking soda, seasalt, yoghurt and unsalted butter. Run dough hook ten minutes. Rest dough ten minutes.

    On a floured cuttingboard, Make four dough tubes, each a 20 inch long tube.

    Fold tube unto U shape, 4” bottom, 8” sides. Close top to O shape, then cross fold sides to touch the bottom corners. Pretzels are now 5” wide and 4” high.

    In large wok, boil water with baking soda till baking soda foams. Immerse one pretzel at a time on a steamer in boiling water in wok till the pretzel floats, about 1 minute. Slide onto oven rack.

    Put 4 boiled pretzels on oven rack in air fryer oven or convection oven. Sprinkle flaked seasalt on top, bake 15 minutes for golden, 22 minutes for dark, at 400F degrees, cool 22 minutes. Enjoy.
