I have already posted a bamboo shoots recipe. This time it's a bit different as I tried out the 🎍 shoots recipe from Assam state. It's too delicious and tastes like Pickle/Achar.

Ingredients

20 minutes
3-4 servings
  • 1 cupchopped young bamboo shoots
  • 1potato chopped
  • 4 clovesgarlic grated
  • 2green chillies cut
  • 1onion sliced
  • 2tomatoes chopped
  • 1/2 sprig Curry leaves
  • 1dry red chilli
  • 1/3 Tspturmeric powder
  • 1Tsp/as required salt
  • 1 Tspcoriander powder
  • 1/3 Tspcumin powder
  • 1/2 Tspponch phutan
  • 2 Tbspmustard oil
  • 1/2 cupwater

Steps

20 minutes

    Arrange and assemble the required ingredients first. Wash the chopped bamboo shoots 2-3 times with water.

    Heat oil in a kadhai. Add and allow to crackle ponch phutan. Add dry red chilli and sliced onion, curry leaves and green chilli. Saute till aromatic and onions are done.

    Add chopped potatoes and fry on medium flame. Mix salt and turmeric powder. Then add grated garlic and saute on low flame till aromatic.

    Then add washed bamboo shoots and mix nicely with masala. Cook for 2 minutes or until bamboo shoots are cooked.

    Now add chopped tomatoes, coriander powder and cumin powder. Mix and cook masala for a minute.

    Add half a cup of water. Cover and cook till water is absorbed by the curry. Now the healthy and delicious bamboo shoots curry is ready to serve with steamed rice. Thanks.
