Tonight’s dinner is all about using leftovers, but that doesn’t mean it’s any less delicious. I had some leftover lentils and stale bread, so I made these tasty fritters.

Tonight’s dinner is all about using leftovers, but that doesn’t mean it’s any less delicious. I had some leftover lentils and stale bread, so I made these tasty fritters.

Earlier, I made a lentil soup for lunch. With the leftover lentils, I made a batter by adding the egg, Parmesan, breadcrumbs, crumbled stale bread, and assorted spices.

Season with salt, shape into small patties, and flatten them slightly. If the mixture is too soft, add more breadcrumbs.

Pour plenty of peanut oil into a skillet. When the oil is hot, fry the patties for a few minutes on each side until golden.

Remove from the pan and place on paper towels to drain excess oil.

These are truly delicious—crispy and light. Enjoy them on their own or with your favorite sauces or a fresh salad.
