Sweet Potatoes 🍠 Pie 🥧

During my recent trip to southern Malaysia, I discovered that a large variety of fruits and vegetables are cultivated there, including sweet potatoes and pineapples. I strive to improve the taste of my food by utilising a range of techniques in my cooking. I'm glad this dish is really easy to find locally and very simple to make. Preheat the oven at 180'c for 10 mins. Then, boil and drain the sweet potatoes, then peel off the skins. Cut into chunks

Mash the sweet potatoes until soft texture.

Prepare the crust size 9inches

Use a hand mixer or blender to combine the sweet potato flesh with the other ingredients. Then pour the pie filling mixture into unbaked pie crust

Bake the pie at 180'c for 45 minutes. Bake until a toothpick comes out clean.

Let it cool at room temperature for at least 2 hours

Best served with 🍨 vanilla and mint ice cream.
