Ingredients

  • 1 (20 oz)package of refrigerated cheese ravioli
  • 2 Tbsolive oil
  • 2 Tbsbutter
  • 1 bunchgreen asparagus, woody ends trimmed & cut in half
  • 1 packageor 1 cup cherry tomatoes, halved
  • 1 Tbsminced garlic
  • 1 Tbsbalsamic vinegar
  • 1/4 cupfresh basil
  • 1/2 tspparsley
  • 1/3 cupfreshly grated Parmesan
  • To taste: Salt & pepper

Steps

    Cut your veggies. Cook ravioli in boiling water according to package instructions. Meanwhile heat olive oil and melt butter in a large skillet over medium-high heat. Add asparagus to skillet and saute until tender, about 4 minutes.

    Add tomatoes and garlic and saute about 1 longer, then toss in balsamic vinegar. Add a little bit of cooking wine if you would like.

    When ravioli is done cooking, drain and add to your skillet. Add basil, salt, pepper, parsley & your freshly grated cheese.
