White Chocolate and Red Berry Cheesecake

Line the bottom of the pan with parchment paper and place an acetate cake collar around the sides.
Melt the butter.
Crush the cookies and mix them with the melted butter.Press the mixture firmly into the bottom of the pan to form an even crust.

Cheesecake Mousse:
Melt the white chocolate in a double boiler.
In a bowl, add the Philadelphia cream cheese. Add the melted chocolate and mix well.
Add the heavy cream and beat with a mixer for 2 minutes.

Pour the cheesecake mousse over the crust and smooth the surface.

Soak the gelatin sheets in cold water.
Heat half of the red berry jam.Remove from heat, add the squeezed gelatin, and stir until fully dissolved.
Add the remaining jam.Whip the heavy cream until stiff peaks form, then gently fold it into the jam mixture.

Pour the raspberry mousse over the cheesecake mousse and smooth the surface.
Refrigerate for 3 hours.

Carefully remove the cheesecake from the pan and decorate as desired.
