Ingredients: 1 can cooked chickpeas, drained and rinsed; 2 cooked beets; 1 carrot; 1 cucumber; 3.5 oz feta cheese (about 100 grams); 1/4 cup olive oil (60 ml); 2 tablespoons balsamic vinegar (30 ml); Juice of 1 lemon; 1/2 teaspoon salt and pepper; 1 clove garlic, minced; 1 teaspoon dried oregano

Ingredients

2 servings

1 cancooked chickpeas, drained and rinsed
2cooked beets
1carrot
1cucumber
3.5 ozfeta cheese (about 100 grams)
Dressing
1/4 cupolive oil (60 ml)
2 tablespoonsbalsamic vinegar (30 ml)
Juice of 1 lemon
1/2 teaspoonsalt and pepper
1 clovegarlic, minced
1 teaspoondried oregano

Drain and rinse the chickpeas.

Cut the beets into cubes. Peel and slice the carrot and cucumber into rounds.

Add the feta cheese.

In a bowl, mix together all the dressing ingredients. Pour over the salad and toss to combine.

Serve and enjoy!
