In a cooking pan add equal quantity of sugar, ghee and water and stir on low heat just to dissolve sugar, do not boil, then let it cool down

Add salt and cardamom powder then add maida to make a tight dough, it can take approximately 4-5 cups of maida

Rest the dough for 15 minutes then roll it into roti, to get that extra layer, fold like in square paratha and roll again. Cut in squares and fry in medium hot oil

I have used natural sugar for this recipe, you can use white sugar
