Cut the lotus root into skull-like pieces using a small knife and boil in water with a little vinegar.

Cut the butternut squash into 1cm cubes, place in a heat-resistant bowl, cover with plastic wrap and microwave at 600W for 4-5 minutes.

Once the butternut squash has cooled, season with mayonnaise, salt and pepper.

Decorate the plate with pumpkin salad, halved Shine Muscat grapes, shredded beets to resemble blood, walnuts, and finally a lotus root skull.
