Take a large sized beetroot and peel it.

Now cut the beetroot into thin round slices.

Now take water and sugar in a pan and once it comes to a boil blanch the beetroot slices.

After blanching the beetroot slices and pat them dry with a kitchen towel.

Now spread the pesto and the chopped walnuts on the beetroot slices and fold it like a taco.

Drizzle withgrated parmesan cheese and serve cold.
