Basque Cheese Cake

Preheat the oven to 230℃
Cooking Instructions

Wet the baking paper with water, roll it up, unfold it, and lay it in a 15cm mold.

Add sugar to the cream cheese that has been softened at room temperature.
Mix with a hand mixer until smooth.(You can also mix with a whisk.) - 3
Beat the eggs and add them in 3 to 4 batches, mixing well to combine.

Add the cream, cornstarch and lemon juice and mix. Pour into the mold.

Bake in a reheated oven at 230℃ for 25 minutes. The surface will be browned and the inside will be slightly undercooked. The surface will be puffed up when baked, but will sink when cooled. Leave in the mold to cool.
