Ingredients

30 minutes
4 servings
  • 1/2 kgchicken, cubes
  • 3 tbsp.yogurt
  • To taste, salt
  • 1 tbsp.ginger-garlic paste
  • 1 1/2 tbsp.coriander seeds
  • 1 tsp.cumin seeds
  • 1 tsp.fennel seeds
  • 1 tsp.black pepper corns
  • 4cloves
  • 1star anise
  • 2green cardamoms
  • 1 stickcinnamon
  • 4-5dried button red chilies
  • 1/2 tsp.turmeric powder
  • 2 tbsp.oil
  • 2onions, chopped
  • 1 tsp.ginger, minced
  • 1 tsp.garlic, minced
  • 1 tsp.dried curry leaves
  • 1tomato, chopped
  • 1/2lemon juiced
  • 2 tbsp.cilantro, chopped

Steps

30 minutes
  1. 1

    Heat a pan and dry roast the whole spices till fragrant.

  2. 2

    Remove and cool and then grind to a fine powder.

  3. 3

    Mix in the turmeric and set aside.

  4. 4

    In a mixing bowl, combine chicken, yogurt, salt and ginger-garlic paste. Mix and set aside.

  5. 5

    Heat 2 tablespoon of oil in a thick bottom pan over medium heat.

  6. 6

    Add onions and sauté until onions are golden.

  7. 7

    Add ginger, garlic and curry leaves. Sauté 1 minute.

  8. 8

    Add the marinated chicken. Stir and cook until the colour of chicken changes.

  9. 9

    Add tomato. Combine and cook until tomatoes are soft.

  10. 10

    Cover with the lid and cook until the chicken is completely cooked.

  11. 11

    Add chicken masala powder and combine.

  12. 12

    Stir and cook until the masala starts to leave oil.

  13. 13

    Add lemon juice and cilantro leaves and combine.

  14. 14

    Serve with roti, rice or dal.
