Cut the pork tenderloin into slices 1 to 1 1/4 inches thick.

Place the sliced pork and liquid shio koji in a plastic bag and gently massage. Let it marinate in the refrigerator for half a day.

Heat oil in a frying pan over low heat, then add the pork slices. Be careful as it can burn easily.

Once browned, flip the slices, cover with a lid, and continue cooking. When the pork is cooked through, plate it and sprinkle with parsley to finish.

★ Regular shio koji is fine, but using liquid koji results in a smoother appearance without grains, which is recommended.
