A lovely Soup that's healthy as well as tasty. A bit on the tangy side, it's an awesome treat as a starter in any party. Be it a Dinner party or a family reunion or even a simple weekend get together, it's a perfect starter that is filling as well as healthy. Serve with a dollop of Fresh Cream and fried Bread Croutons. Here I have served it alongside fresh and homemade Foccacia Bread that was baked at home sweet home.
That's not all. It was a huge hit with my family this time because it was served with Foccacia. It was so very delicious. It was much much better than the Croutons. And Foccacia was made using all the fresh Herbs that were dried and preserved at home for a long time use. Thyme, Rosemary and Basil were used by me in this Herbed Foccacia along with Onions. You would love to make this Bread as well as the beautiful looking thick and creamy Tomato Soup on any given day. You would never regret it. Trust me on that. Let's get started.

Heat olive oil in a large saucepan. Add ginger and garlic both. Fry for a minute and now add roughly chopped tomatoes and onion with some salt. Saute all of that along with bay leaf, green cardamoms, black pepper, coriander powder and red chilli flakes or powder.

Saute until the raw smell fades away and it becomes a bit aromatic and almost cooked well with about 2 cups of water. Allow it to cool down before blending to a smooth puree.

Garnish with a few chilli flakes and a dollop of fresh cream at the time of serving. Serve alongside freshly baked foccacia for a lovely experience with your loved ones besides you. Enjoy! Yum!

Strain this puree in a bowl. Return it back to the pan. Boil it for the next 5-6 minutes on a low heat. Take it off the heat now and add more of butter as per your family's liking. Adjust salt at this stage. Mix well and it's all ready to be served hot.
