First day of spring, but here in Connecticut, today doesn’t really feel like it…

I’m bringing you a traditional Spanish stew, perfect for cold winter days. I’ve known this dish since I was little—it was always in my home! 🥰

It’s very easy to make and packed with flavor!

Plus, white beans are rich in fiber (over 21gr per 100gr), which helps regulate digestion. They’re also a great source of B vitamins, especially folic acid, and minerals like potassium, calcium, phosphorus, magnesium, iron, and zinc.

Ingredients

  1. Olive oil
  2. Salt
  3. 1/2onion
  4. 6baby carrot / 1 regular carrot
  5. 1/2potatoe
  6. 3 clovesgarlic
  7. 1/2red bell pepper
  8. 1vineripened or Campari Tomato
  9. 1 teaspoonSmoked Spanish Paprika (pimentón De la Vera)
  10. 3bay leaves
  11. 2 cups(about 17.5oz) canned or cooked white beans (500gr)
  12. 3 cups(about 24fl oz) water (700ml)

Cooking Instructions

    In a small pot, heat a good drizzle of olive oil. Once hot, start by chopping the onion and adding it to the pot.

    Slice the baby carrots (or regular carrot) into rounds and add them as well.

  3. 3

    Peel and slice the potato into thin rounds and add it to the pot. The potato helps thicken the broth as it breaks down. Add salt to taste.

    Peel and chop the garlic cloves, then add them to the pot. Stir frequently to prevent burning.

    If using roasted and peeled red peppers (such as piquillo peppers), chop them and add them now. If using raw red bell pepper, add it earlier so it has time to soften. Stir until everything turns golden.

    Wash and chop the tomato, then add it along with the smoked paprika. Stir well so the paprika colors the mixture evenly.

    Add 3 cups of hot water (this helps it boil faster) and the bay leaves to enhance the flavor.

    Drain the white beans and add them to the pot. Let everything simmer for about 30 minutes, stirring occasionally. Taste and adjust seasoning as needed.
