White bean stew!

First day of spring, but here in Connecticut, today doesn’t really feel like it…
I’m bringing you a traditional Spanish stew, perfect for cold winter days. I’ve known this dish since I was little—it was always in my home! 🥰
It’s very easy to make and packed with flavor!
Plus, white beans are rich in fiber (over 21gr per 100gr), which helps regulate digestion. They’re also a great source of B vitamins, especially folic acid, and minerals like potassium, calcium, phosphorus, magnesium, iron, and zinc.

I’m bringing you a traditional Spanish stew, perfect for cold winter days. I’ve known this dish since I was little—it was always in my home! 🥰
It’s very easy to make and packed with flavor!

Cooking Instructions

In a small pot, heat a good drizzle of olive oil. Once hot, start by chopping the onion and adding it to the pot.

Slice the baby carrots (or regular carrot) into rounds and add them as well.

Peel and slice the potato into thin rounds and add it to the pot. The potato helps thicken the broth as it breaks down. Add salt to taste.

Peel and chop the garlic cloves, then add them to the pot. Stir frequently to prevent burning.

If using roasted and peeled red peppers (such as piquillo peppers), chop them and add them now. If using raw red bell pepper, add it earlier so it has time to soften. Stir until everything turns golden.

Wash and chop the tomato, then add it along with the smoked paprika. Stir well so the paprika colors the mixture evenly.

Add 3 cups of hot water (this helps it boil faster) and the bay leaves to enhance the flavor.

Drain the white beans and add them to the pot. Let everything simmer for about 30 minutes, stirring occasionally. Taste and adjust seasoning as needed.

Hi everyone!!! After yesterday’s Clean Monday or Ash Monday and a day of fasting, I am back with another Chicken recipe. 🙂 Fasting usually last for about 40 some odds days, which is way to long of time at least for me that is, so what I usually do is fast the last week before Easter. I think most people do that know, busy schedule and fasting a bit difficult. If your in the mood to eat something different give this recipe a try, you just might like it. 🙂My husband is a fan of Green beans, me not so much, but before I say NO to something I like to try it out first, I have actually tried to eat them a few times in the past, but it was a no go. I gave it one more try again today just in case my tastebuds have changed aaaand NO they have not..:), so I can officially say I am not a fan of Green Beans.Since, I do love Chicken this recipe has the combination of both worlds, and the taste is just superb (Chicken of course is). 🙂 With the addition of fresh tomatoes and herbs simmering together just makes you want to eat it all at once. Adding a side dish of Feta cheese, drizzled with Olive Oil, topped with fresh Oregano, dipping that fresh slice of bread into the sauce AWWW!! what more can I say. 🙂 Foodzesty -
