It is slow-cooked with onions, carrots, celery, and garlic for depth of flavor and simmered with tomatoes. Often finished with a touch of milk or cream for a velvety texture. The long cooking process allows the flavors to meld beautifully, resulting in a thick, savory sauce perfect for coating pasta like tagliatelle or rigatoni.

Ingredients

  1. 2 stalkscelery, chopped
  2. 2carrots, chopped
  3. Halfa large onion, chopped
  4. 5 clovesgarlic, chopped
  5. 4 ouncespancetta chopped small
  6. 1 1/2lbs. Ground pork, veal beef
  7. 1 tbstomato paste
  8. 32 ounceswhole tomatoes, crushed
  9. 1 cupwhole milk
  10. Salt and pepper to taste

Cooking Instructions

    On medium heat cook pancetta until crispy

    Add and celery, carrots, and onions cook for five minutes until soft

  3. 3

    Add in garlic cook one minute

  4. 4

    Add in pork veal beef mixture

  5. 5

    Cook for 15 minutes until almost all liquid is gone

  6. 6

    Squeeze in 1 tablespoon of tomato paste and cook down for three minutes, stirring into the mixture.

    Add in tomatoes and one cup whole milk stir add salt and pepper to taste. Turn heat to medium low allow sauce to simmer for an hour and a half. Stirring occasionally.

    Serve over rigatoni top with grated cheese
