Heat oven to 230oC

Add onion, tomatoes, oregano, garlic, olive oil, peppers (both), salt and pepper into roasting dish. Mix and roast for 20min

Cut each fish fillet into two, salt, pepper and oil the fillets

Add wine, olives and fish to the vegetables and continue cooking for another 12 mins

Serve with giant couscous
