Our 16th year old daughter cooks at home and her 18th year old sister helps 🥰 They are after their dad who loves to cook & he cooks every weekend or every chance he gets when ever he's not occupied with his work. Each cooks differently and it's a reflection of our different backgrounds as our kids grow up in Australia and my husband and i brought up in Malaysia. So at home, we have both western and asian palate to cater to. Now we are in Houston, our girls are crazy with anything and everything Mexican and Southern. They watch a lot of cooking videos, learning to cook their newly favourite Mexican food at home. We are happy to see them being constructive with what they learn online. Today, kids are in the kitchen again. Though it’s not Mexican today, we are happy with their simple pasta served with some sides.

Ingredients

3 servings
  1. 1 cupevaporated milk
  2. 1/4 cupfull cream milk
  3. 4 tablespoonsbutter
  4. 3 tablespoonstomato paste
  5. 1 TSPpaprika
  6. 1 TSPgarlic powder
  7. 1 TSPblack pepper
  8. 1 Pinchsalt or as needed
  9. 1/3 cuppasta water
  10. 1/2brown onion
  11. 2 clovesgarlic
  12. 1/3 Cmixed grated cheese (add as needed) See pic for reference
  13. 2 Cupspasta of your choice
  14. optional ingredients
  15. 1. Chilli Flakes
  16. 2. Heavy Cream

Cooking Instructions

    Gather and prepare the ingredients. Boil pasta according to the package instructions. While the pasta boils, mix evaporated milk and regular milk in a bowl. Mince half an onion and 2 garlic cloves, keeping them separate. In a small bowl, combine paprika, garlic powder, and black pepper. Set aside four tablespoons of butter in a bowl.

    Below is the type of mixed grated cheese and tomato paste we use at home.

    Melt the butter in a pan, then add the onions, sauté until translucent. Then add garlic and tomato paste. Stir well until ingredients are well mixed. Then pour in the evaporated milk, full cream milk and pasta water.

    Add seasoning mix (paprika, garlic powder, salt and black pepper). Season with a pinch of salt and stir. You can adjust the seasonings later. Next, add grated cheese, adding 1/3 cup first, stir well until the cheeses melt and as you stir, check the consistency. Add 1 or 2 tablespoons more (cheese) only if needed. Grated cheese is used to thicken the sauce.

    Add in the pasta and mix well. Taste and adjust seasonings if needed. Turn off the heat. Slice some bread, spread generous amount of butter on them then toast them well.

    Plate the pasta with toasted bread. Voila, bon appetite!
