Ingredients

2-4 ppl
  1. 8potato 🥔
  2. 1large onion 🧅
  3. 1/2green pepper 🫑
  4. 1/2red or orange pepper(or both)
  5. 3 cloves🧄 garlic
  6. 1scotch bonnets opt
  7. 2 tspsalt
  8. 1 tspblack pepper
  9. 1 tsporegano 🌿dried
  10. 1/2-3/4 coil
  11. 3/4 cwater
  12. 2 tspparsley 🌿 dried

    Wash potatoes 🥔 peeling is optional. Make slices to ur preference. I do about 1/4 of an inch. A mandolin is perfect for consistency.After slicing turn on pan to a medium heat with about 3/4c of water. Sprinkle top with 2tspsalt n 1tsp pepper. Cover and cook until partially soft.

    Slice onions and cut each slice in half add to potatoes,sliced peppers,sc bonnet,garlic diced and oregano. The oregano gives these potatoes a lovely flavor. Add about 1/2 c oil of ur choice. I used vegetable. Turn back up to a medium high heat turning over about every minute. Be sure to get the brown ones from the bottom to the top.

    If temperature is causing burning turn down just a little. You should start to see them turn a golden brown color. Feel free to drizzle oil as needed.

    When they are mostly brown without burning turn off the heat. Potatoes should be soft and maybe a few onions will be caramelized 😘 I made scrambled egg 4, with salt pepper parsley and curry. I hope you give these a try.
