Whisk 4 eggs and add salt and turmeric. Make sure that the eggs are frothy and nicely beaten

In a pan heat up butter. Add cumin seeds and curry leaves and let it splutter.

Add onions and green chillies and let them cook. Once the onions turn translucent add ginger and garlic.

Add finely chopped tomato and cook for a few minutes. Make sure all the water evaporates from the tomatoes. Add spices and cook until a nice masala paste is formed.

Add beaten eggs to this paste and scramble gently for a few minutes. Don't let them overcook.

Garnish with coriander. I enjoy it as a sandwich filling between 2 slices of buttered toasted bread.
