Ingredients: 9 oz orzo pasta (about 250 grams); 1 small bunch parsley; 1 tbsp olive oil (15 ml); 1 cucumber, peeled and finely chopped; 4.5 oz cherry tomatoes, halved (about 125 grams); 1 medium red onion, peeled and sliced into rings; 10 Kalamata olives, halved and pitted; 3.5 oz crumbled feta cheese (about 100 grams); 4 tbsp olive oil (60 ml); 2 tbsp balsamic vinegar (30 ml); 1/2 tsp dried oregano; 1 pinch salt

Serves 5 servings

9 ozorzo pasta (about 250 grams)
1small bunch parsley
1 tbspolive oil (15 ml)
1cucumber, peeled and finely chopped
4.5 ozcherry tomatoes, halved (about 125 grams)
1medium red onion, peeled and sliced into rings
10Kalamata olives, halved and pitted
3.5 ozcrumbled feta cheese (about 100 grams)
Dressing
4 tbspolive oil (60 ml)
2 tbspbalsamic vinegar (30 ml)
1/2 tspdried oregano
1 pinchsalt

45 minutes

Cook the orzo in boiling salted water until al dente. My package said 14 minutes.

Reserve a little of the cooking water, then drain the orzo.

Place the orzo in the serving bowl. Mix in the reserved cooking water, olive oil, and parsley. Let it cool.

Add the remaining salad ingredients.

Add the dressing and toss to combine.

Serve. Enjoy it on its own or as a side dish.
