In a bowl, mix together curd, oil, brown sugar, and vanilla essence. Whisk until the sugar dissolves.

In another bowl, mix together whole wheat atta, cocoa powder, baking powder, baking soda, and salt.

Add the dry ingredients to the wet ingredients in batches, mixing well after each addition. Add milk gradually until you get a thick batter of dropping consistency (like idli batter).

Let the batter rest for 5-6 minutes to hydrate the atta.

Heat the appe pan on low to medium heat and grease it well with oil.

Fill the moulds no more than 3/4th level. If you fill them to the top, they will overflow and ruin the muffins' shape.

Cover with a lid and cook on low heat for 4–5 minutes till the top looks set. Flip each muffin gently with a skewer. Cook 2–3 minutes on the other side. Check with a toothpick to make sure once done. Do not overcook.
