This idea started as stuffed chicken breasts with jalapenos, cream cheese, cheese, jalapeno seasoning, and bacon. It keeps morphing.

Cut the chicken into bite sized chunks and place in a gallon sized ziploc baggie. Add a cup of Ranch Dressing to baggie. Zip and massage the ranch to coat the chicken. Refrigerate.

Whip sauce ingredients together with hand mixer until well combined and there are no individual chunks.

Dump Chicken with the ranch into aluminum roaster pan. Spread cream cheese mixture on top of the chicken.

Place in heated electric smoker, or oven. For the first time we decided to smoke it with hard wood Mesquite chips. Stir carefully. Cook until Chicken is at least 160°F internally. I am debating on topping with more cheese and sliced Jalapenos. Slow smoked for about 5 hours.
Tips
The sauce looked really watery the first two times we stirred it. Slow smoking it gave it more of the smoky flavor I was after. I would also bake in the oven.
