Ingredients

30 minutes
5 person
  • 1 kgWinter red carrots
  • 1/2 cupghee / clarified butter
  • 3 cups (750 ml)milk
  • 1 cupsugar
  • 1/2 tspcardamom powder
  • 1 tbspghee
  • 10-12almond slices
  • 10-12cashew nuts slices
  • 2 tbspraisins
  • 👉 For Garnishing :--
  • Roasted nuts as per required

Steps

30 minutes
  1. 1

    First upon wash and peel the carrots. Then roughly chopped then into small pieces.

  2. 2

    Now heat ghee in a pressure cooker. Add cashew nuts, almonds, pistachios and saute for a minute or until they swell up.

  3. 3

    Then add carrots and saute for 2-3 minutes. Then add milk and mix very well. Stir in the milk, cover and cook under pressure on medium heat for 3 whistles.

  4. 4

    Then open the cooker once the pressure has reduced completely. Place the cooker back on heat, add sugar and green cardamom powder and mix well. Cook till the mixture thickens. If there are any large chunks remaining, mash them with a ladle.

  5. 5

    Now add the ghee while stirring it continuously roast the gajar ka halwa on medium to low till the ghee is released from the sides and the halwa forms a ball type structure and stop sticking to the pressure cooker.

  6. 6

    Now add the roasted nuts on the Gajar Halwa and mix very well. Then serve hot or chilled.

  7. 7

    Now our very healthy and delicious Instant Gajar Halwa is ready for serve. Can be stored in the refrigerator for upto 15 days.
