This is Hyderabadi Nashte Ka Khagina meaning Breakfast Khagina or Anda Bhurji with freshly chopped healthy Red Amaranthus or Laal Maat Bhaji as a yummy twist by me. With this amazing Leafy Vegetable, I had given it an interesting twist for a change on a weekend Morning for Breakfast and Picnic. With this yummy variation as a lovely Tiffin for a family picnic or a Potluck, it was a complete novice meal. The best part is that it can be whipped up in just a few minutes and suits the busy morning hour rush and hence comes as a boon to all the mothers and especially the working mothers on the week days. This is similar to Scrambled Eggs which is an all time favourite dish of many a people around the World. This is infact Desi style of Scrambled Eggs that's so very easy to whip up on any given day. Enjoy your meals with this super easy dish. Not only for Breakfast, this can be enjoyed with Phulkas at Lunch and Dinner both.

Steps

Heat butter and oil in a pan over medium heat and saute the onions. Add the ginger garlic paste and the green chillies too. Saute the onions very well until light pink in colour. Also add the rest of the powdered spices as mentioned.

Add chopped red amaranth and cook until wilted.

Pour eggs into the pan and scramble gently with the leafy vegetable.

Cook until eggs are just set. Garnish with chopped coriander leaves and adjust salt as well.

Serve it piping hot alongside any Indian Bread. Phulkas, Chapatis, Parathas all go very well with it. Enjoy!
