In a bowl, mix the yeast with the tablespoon of sugar and a little warm water. Stir well and let it activate until a thick foam forms.

On a clean surface, make a well with the flour.
Sprinkle the 2 teaspoons of salt around the outer edge of the flour.
Pour the yeast mixture into the center and start to combine, gradually adding the warm water until you have a soft, smooth dough.
Knead vigorously for 10 minutes and let the dough rise, covered, until it doubles in size. - 3
Once risen, roll out the dough with a rolling pin into a large rectangle.
Using a spatula, spread the 7 oz (200 g) of butter evenly over the entire surface of the dough.
Fold the dough as needed to enclose the butter. This will create the flaky layers when baked. - 4
Cut the dough into equal strips (you can use a cutter or knife).
Twist or fold the strips into your desired shapes. - 5
Cut the dough into long strips or small rolls, depending on the variety you want to make.
For filled varieties, have cubes of cheese and salami, and cubes of quince paste ready. - 6
Quince Paste Biscuits:
Take a portion of dough, twist it into a strip, roll it into a circle with a hole in the center, and place a cube of quince paste right in the middle. - 7
Roll out the dough, place a piece of cheese and salami at one end, and roll up to seal the filling.

While the dough is rising, prepare the syrup.
Place the water and sugar in a small saucepan over medium heat.
Stir just at the beginning to dissolve the sugar. Once it starts to boil, let it cook without stirring for 3 to 5 minutes, until the bubbles become a bit thicker and the liquid has a slightly syrupy consistency.
Remove from heat and let cool slightly before using. - 9
Place the biscuits on a baking sheet (you can overlap them a little so they rise upward) and bake in a preheated oven at 400°F (200°C) for 15-20 minutes or until golden brown.

Sweet variation:
After baking, brush with a light syrup and sprinkle sugar on top.
