Simmered Pork Ribs

My daughter gave me a large chunk of Pork Ribs. I planned to bake it, but the weather was just too hot and I didn’t want to use oven. I don’t have BBQ. So, I just simmered them in a pot like my ‘Adobo Inspired Pork Kakuni’. This might be the easiest method to cook Pork Ribs.
Simmered Pork Ribs

Steps

Insert a knife between bones and separate Pork Ribs.

Place all ingredients in a pot. Add extra Water to cover if required.

Bring to the boil and remove any unwanted scum and blood on surface. Lower the heat, cover with a lid, and simmer for 1-2 hours OR until soft, adding extra Water if required.

*Note: This process can be done much more quickly using a pressure cooker. Reduce the amount of Water to 1 cup and cook under pressure for about 20 minutes.

Remove the lid, and simmer until the sauce is thickened.
